French Cheese Puffs (GougÈres):

Prep time: 10 minutes
Preheat: 400°
Bake time: 25-30 minutes
Makes: 4 dozen small puffs

1 cup Water
½ teaspoon Fine sea salt
1 stick (4 oz) Unsalted butter
1 cup Flour
5 Eggs
1½ cups Grated cheese (Gruyère, Parmesan, etc.)

  1. Prepare to bake:
    Line several baking sheets with parchment paper.
    Assemble pastry bag and tip (if piping is desired).

  2. Prepare the batter:
    Combine water, salt and butter in a heavy saucepan over medium heat and bring to a boil.
    Add the flour all at once, whisking constantly, until it forms a paste.
    Cook, stirring, for one minute more.
    Remove from the heat and whisk in eggs, one at a time, by hand or with an electric mixer.
    Stir in cheese.

  3. Form puffs and bake:
    Spoon or pipe batter onto parchment lined baking sheets, about 1¼” wide.
    Bake until very brown and crisp, about 25-30 minutes.
    Serve warm.

Notes

-Baked cheese puffs do not store well in the refrigerator as they tend to get soggy.
-Baked cheese puffs can be frozen and heated at 350° to re-crisp.
