Spinach Filling (for Spanakopita)

1 tablespoon extra virgin olive oil
½ medium onion, chopped
3 green onions, chopped
10 ounces spinach (fresh or frozen)
4 ounces feta cheese, crumbled
1 cup whole milk ricotta cheese
Dash cayenne pepper or nutmeg
Sea salt and freshly ground pepper, to taste
Fillo Pastry

Heat a medium sauté pan and add the oil. Sauté both onions, then add the spinach and cook until wilted and almost dry.  Allow to cool, and combine with remaining ingredients. Season to taste and use as a filling for fillo pastry.
