I love everything about the holidays, especially cooking for a crowd. Even though I mostly cook for myself on a regular basis, I cook as if I have a family of six! Good thing I love leftovers.
And while I am all about waking up at 6am on Thanksgiving or Christmas to start making dough for dinner rolls, prepping a turkey or giant beef roast for the main dinner, by the next day, I am pooped! I don’t want to set one foot in the kitchen the day after a big holiday like that. And I’ve usually spent a lot of money on food for the big day, so I love to balance that out with a cheap brunch.
Which is how these breakfast baked potatoes were born. These are customizable; everyone can add whatever veggies they want into their breakfast baked potato. You can put them on a baking sheet with parchment paper and write everyone’s name next to their potato, and then pop them in the oven for 20 minutes the next day.
Buy some pre-cut fruit and fresh orange juice and put a pot of coffee on, breakfast is served. And you can stay in your pajamas all day too!
Heat oven to 400. Rub the potatoes with grapeseed oil, and salt and pepper. Bake the potatoes for 1 hour. Let cool and store in the fridge. This can be done days in advance.
When it comes time to make the breakfast baked potatoes, slice the top of the potato open, and scoop out most of the potato pulp – save it to make mashed potatoes, or mashed potato cakes.
Layer the bottom of the potato with veggies of choice. Crack one egg into each baked potato, season with a bit of salt and pepper and bake for 20 minutes at 350. After 15 minutes, add the shredded cheese and bacon and bake for 5 more minutes until the cheese is melted.
Serve with fresh fruit, orange juice and hot coffee. Brunch is served!
