They say the first step to recovery is admitting that you have a problem. So, here goes.
I’m a recovering Grub Hub addict.
As a trained cook, it’s a terrible and costly habit that often would leave me feeling dissatisfied with the quality of food I was eating. I realized that it’s mostly the convenience that appealed to me. You mean I can sit around and read a book while someone brings me dinner? Sounds great! Until you realize that you’ve spent $30 plus a nice tip for something that is less than delicious.
So I’ve been on the hunt for easy recipes that are cost effective and simple for me to put together. Whether you’re tired from the end of the day, or just want to spend some downtime with your family, this low maintenance dinner will have you deleting the Grub Hub app on your phone.
1/4 cup Sriracha
1/2 cup rice wine vinegar
3 tablespoons of soy sauce
3 chopped garlic cloves
3 tablespoons of sweet chili sauce
Mix all ingredients together in a small sauce pan.
Pour half of the mixture into a plastic bag or bowl to marinate your chicken. I chose bone-in, skinless chicken thighs. You can marinade your chicken for as little as 30 minutes or up to 12 hours overnight. Keep the other half of your mixture in the sauce pan and cook over a medium heat until your sauce has thickened.
Place your chicken on a sheet tray lined with parchment paper and season liberally with salt and pepper.
Baste with Sriracha-honey glaze, and place in a 425-degree oven until the temperature reaches 165 degrees internally. Baste periodically throughout the cooking process with your glaze.
My other taste testers have less discerning palates, but they were pleased nonetheless.
