When I first started working at The Chopping Block as a class assistant back in 2010, I had no idea it would change my life. What began as a fun part-time gig (on top of my full-time gig at the time) became my culinary school, my inspiration, and the spark for a career as a registered dietitian. It was here that I developed a passion not just for cooking, but for sharing the transformative potential of food with others.
Just over a year ago, the end of one job led me to reflect on my career path—where I’d been, where I was headed, and what sparked my journey into nutrition. And I realized I hadn’t fully recognized my gratitude for the place where it all started. So, this is my thank you letter to The Chopping Block, the place that set me on the path to helping others cook and eat healthfully.
Working as a class assistant was like stepping into a hands-on classroom where each tool and ingredient had something to teach. I absorbed so much from observing talented chefs and assisting students. I learned basic knife skills and with so much “mise en place” that took place before every class, I was able to hone these skills that people still find impressive to this day (I’m no professional chef, but I’m decent!). I learned to balance flavors, appreciate the nuances of cookware, and interpret recipes in a new way. The Chopping Block gave me a solid culinary foundation—an education that felt as transformative as culinary school.
Beyond techniques, I learned to communicate effectively about food, skills that have proven essential in my work as a registered dietitian. Watching the chefs engage students and simplify complex ideas taught me how to present nutrition and health concepts in a clear, accessible way. This experience went beyond learning to cook—I was learning how to share and spark a love of cooking in others.
At The Chopping Block, I discovered a love for teaching people to cook in a way that’s both enjoyable and healthful. The more I learned, the more inspired I felt to help others make nutritious choices. I started rethinking traditional recipes to make them more nutrient-dense without sacrificing flavor. I also started to experiment with writing my own recipes. By reimagining ingredients and balancing flavors in health-focused ways, I discovered the art of creating meals that not only taste good but contribute to well-being. This sparked the desire to pursue a career where I could blend my love for cooking and nutrition—ultimately leading me toward becoming a dietitian.
After some time as a class assistant, I transitioned into working on the Events team at TCB, now as my full-time job! Whether it was a team-building event, a corporate outing, or a birthday celebration, I saw firsthand how food brought people together. I watched groups bond over shared meals, foster open conversations, and build connections. Planning these events reinforced that food can be a powerful way to connect and inspire. Food is truly a tool for fostering relationships and creating shared experiences.
Looking back, I feel immense gratitude for The Chopping Block and what it’s given me, which is why I’m still here sharing my thoughts and insights on the blog every month! TCB has been a place that has nurtured my growth and passion for teaching, cooking, and wellness. It showed me that cooking is more than a skill, it’s a way to connect, communicate, and inspire.
