Chipotle Aioli

Homemade mayonnaise that packs a punch in just 5 minutes? Yes, it's possible! You can even use your food processor or blender if you like.

Start to Finish: 5 minutes

For this recipe you’ll need:

  • 1 egg yolk
    2 teaspoons Dijon mustard
    1 clove garlic, minced
    2 tablespoons sherry vinegar
    3/4 cup grapeseed oil
    1/4 cup Spanish olive oil
    1 canned chipotle pepper, minced
    Salt and pepper to taste
      1. Whisk together the yolk, mustard, garlic and lemon juice in a bowl.

      2. Slowly add the oils in a thin, steady stream while whisking vigorously until the sauce is emulsified and thick. It should have the consistency of mayonnaise.

      3. Fold in the chipotle, and season with salt and pepper to taste.
