Mango Barbecue Sauce

This fruity take on a barbecue sauce goes perfectly with our Sweet and Spicy Jerk-Rubbed Ribs

For this recipe you’ll need:

  • 2 cups pineapple juice

  • 1 jalapeño pepper, seeded and minced

  • 1 tablespoon ginger, freshly grated

  • 1 ripe mango, medium dice

  • 3/4 cup ketchup

  • 3 tablespoons apple cider vinegar

  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons brown sugar

  • 1 tablespoon soy sauce

  • 2 tablespoons fresh cilantro, rough chopped

  • Salt and pepper to taste

      1. Combine the pineapple juice, jalapeño and ginger in a heavy saucepan.

      2. Bring to a boil, reduce the heat to a simmer, and cook until reduced by half.

      3. Stir in the mango, ketchup, vinegar, Worcestershire sauce, brown sugar and soy sauce.

      4. Simmer the sauce to blend the flavors, about 10 minutes.

      5. Puree the sauce in a blender or using an immersion blender until smooth. Stir in the cilantro, and season with salt and pepper to taste.
