For this recipe you’ll need:
1/2 fresh pineapple, peeled, small diced
2 scallions, thinly sliced on the bias
1 jalapeno pepper, seeded and minced
1/2 red bell pepper, small dice
1 tablespoon fresh mint, rough chopped
1 tablespoon fresh cilantro, rough chopped
1 lime, zested
Lime juice and extra virgin olive oil to taste
Salt and pepper to taste
Mix together all of the ingredients for the salsa.
Allow the flavors to blend for 30 minutes before serving.
