Pork Brine

For this recipe you’ll need:
4 cups cold water
1/4 cup kosher salt
2 tablespoons brown sugar
1/2 lemon, cut into slices
1 sprig rosemary or other herbs of your choice
2 cloves garlic, smashed
1 teaspoon whole black peppercorns
Whisk together the water, salt, sugar, lemon, rosemary, garlic and peppercorns, ensuring the salt has completely dissolved. Tip: You can double or triple this recipe to accommodate larger pieces of meat.
Add your meat and brine as instructed.
