Sauce Verte 

This flavorful sauce goes perfectly with steak, chicken, pork or fish.

For this recipe you’ll need:

  • 1 shallot, peeled and quartered

  • 2 tablespoons lemon juice

  • 1 teaspoon anchovy paste

  • 2 tablespoons capers, drained

  • 1 cup parsley leaves

  • 1/4 cup basil leaves

  • 2 teaspoons Dijon mustard

  • 1/2 cup extra virgin olive oil

  • Salt and pepper to taste

    1. With the food processor running, drop the shallot though the feed tube and process until minced.

    2. Add the lemon juice, anchovy paste, capers, parsley, basil leaves, Dijon mustard and olive oil. Process until smooth.

    3. Season with salt and pepper to taste.
