Watermelon and Arugula Salad with Pickled Watermelon Rind

This summer salad has the perfect combination of sweet fruit, salty cheese, spicy greens, crunchy nuts and tangy pickled watermelon rind.

Start to Finish: 20 minutes

For this recipe you’ll need:

  • 2 cups watermelon, medium dice (save the rinds for pickling)
  • 3 cups arugula
  • 1 shallot, thinly sliced
  • 2 tablespoons fresh basil, chiffonade
  • Red wine vinegar and olive oil to taste
  • Salt and pepper to taste
  • 1/3 cup sliced almonds, toasted
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup pickled watermelon rind
    1. Gently toss together the watermelon, arugula, shallot and basil.

    2. Dress with the vinegar and olive oil to taste, and season with salt and pepper.

    3. Spoon the salad onto plates and top with a sprinkling of almonds, feta cheese and pickled watermelon rind.
