Grilling season is one of my favorite times at The Chopping Block. Who wouldn’t want to have a chef make food for you in one of our demonstration-style grilling classes like Italian Surf and Turf Demo on the Patio? Or roll up your sleeves and make a Mexican feast yourself in Double Date: Hands-On Fiesta on the Grill? Grilling classes will run as long as Mother Nature allows!
If you are like me and love burgers and never want summer to end, then I have a great one for you to try: Sirloin Burgers with Bacon and Cheddar Cheese. The best part of this dish is that you probably already have most of the ingredients that you need in your kitchen!
All you need is:
- 1 pound ground sirloin
- 1 teaspoon granulated garlic
- 1 chipotle pepper, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 4 rolls, split
- 4 slices cheddar cheese
- Your favorite BBQ sauce
- 1 onion, grilled (slice an onion and toss with a little oil and grill in a basket until there is some charring)
This recipe is so simple and delicious. To make the patties, combine the ground sirloin, granulated garlic, chipotle pepper, salt and pepper.
Evenly divide the ground beef mixture into four equal portions, that are approximately 1/2-inch thick. Lay the patties on a parchment-lined sheet tray, and season the outside of each patty with additional salt and pepper to taste. My tip is to refrigerate until you are ready to grill!
Heat a gas or charcoal grill over medium heat, or if you are indoors, heat a grill pan over the stove burners.
Grill the burgers on the first side until well marked and caramelized. Flip and repeat. Continue to cook until the burgers are cooked to your liking. An internal temperature of 130º to 135° is ideal for medium.
Just before the burgers come off the grill, top each one with a slice of the cheese, and allow to melt. Transfer the burgers to the bottom bun. Top with a dollop of your favorite BBQ sauce followed by the onion.
Gently set the top bun on the burgers and enjoy. We made slider-sized burgers in class but the recipe is for four regular burgers - your choice!

- Evenly divide the ground beef mixture into 4 equal portions that are approximately 1/2-inch thick. Lay the patties on a parchment-lined sheet tray, and season the outside of each patty with additional salt and pepper to taste. Refrigerate until ready to grill.
- Heat a gas or charcoal grill over medium heat.
